Earlier in the month Neville formed part of a panel on Radio New Zealand talking about Coeliac Disease. Its Hot, Hot Hot!

With the holidays over and schools starting back everyone is getting into their old routine! We are hearing from many of you that are baking to fill those lunch boxes. There is a problem though, temperatures are still very warm here in the southern hemisphere.

We have had a few emails and calls from people having trouble with their breads either sinking in on the sides or having holes in when they slice them. The reason for this is the bread is rising too quickly and is over proving due to the warm weather. If this is happening use warm instead of hot water to make your bread mix. Also, set a timer for the proving and ensure the oven is heated up in time to put the bread in. We also recommend baking the bread an extra 5 minutes to form a good crust, as this helps the bread hold it’s shape.

Another thing that has also been happening is biscuits spreading on the trays when in the oven. This happens when the butter is too soft, causing the fat to separate before the flours have time to set. On a warmer day use butter from the fridge or only leave it on the bench for a few minutes before using. Alternatively make the biscuits and then put the tray in the fridge for 20 - 30 minutes to firm the butter up again.

RecipePikelets:  Very easy and quick, these pikelets are very versatile. Use them for breakfast, morning tea, lunch or just as a snack!



Recipe 2Zucchini Loaf: This loaf is so moist and the addition of sultanas, walnuts and a hint of cinnamon makes it simply scrummy. Have it plain or with a smidge of butter!


Valentines Day

We have a special dessert which is a little bit naughty but oh so nice! White Chocolate and Berry Crème Brûlée. This can be made in advance, making it very easy to caramelize the top before serving. Coming very soon to the Recipe Club so keep an eye on Facebook!
